I learnt to make pavs years ago and well it’s my favourite to make.

All you do is beat the buggery out of the egg whites and sugar until it is stiff and bake it slowly in the oven.

My oldest loves it too. Had good intentions to bake it for her birthday. It has since came and gone.

Today is it..I’ll bake a little one for us.

Below is one I baked one Christmas a few years back. Used 12 eggs, took forever to beat even with an electric beater .
