After all night racking my brains I’ve found a solution.

Our sliding door is coming in two days. The plumber have been and his idea is that he can install our kitchenette’s sink taking the water supply from the toilet and plumb the waste straight back to the toilet waste. 

All he needs is a water heater for the hot water. It means that we don’t have to move the toilet door. Which is all well and good for us . Less work for hubby as he can then just put up walls.

My dilemma is where to put the staff bench for them to have their lunch? 

As the existing toilet wall is only 1400mm long and by the time the sink and drainer goes in there’s no room for the staff to sit.

Took me all night to figure out to put in a fake wall to give some privacy to the entrance to the loo and thus staff having lunch can have their lunch less the view of the loo. 

I’m brilliant. Very proud of myself 😊

The dotted line is space allocated for a mezzanine up high for storage.

then below the mezzanine will be wall cupboards for the kitchenette. 

I’ll put the staff lunch bench along the fake wall.

From calculation if the sink bench is 600mm wide then the staff’s bench will be 1100mm long (800mm then 900mm) which is plenty for 1-2 to sit on stools.
