Tried making it the other day and well it took me a few hours because I didn’t turn it on to full boil.

Today tried it again so I could work out the recipe. I hate not knowing how to do stuff.

Here is my version.

250g or a rice bowl of black glutinous rice
100g of sugar

1 litre of water

Coconut Milk

1 can (400ml) of coconut extract

1-2 tablespoons of corn flour in some cold water

2 tablespoons sugar

3 tablespoons crushed roasted peanuts

1 teaspoon of salt

2 teaspoons of roasted sesame seed

Soak the rice over night, strain then into a pot with the water. Cover with lid and bring to full boil then reduce a little . Continue to boil, stirring occasionally until all of the water have evaporated. Take off heat, add in the sugar, stir well and rest for 10 minutes.

***The water volume is a guide only. It depends on the rice grains. Thus I’d add the guide amount then once that’s all evaporated I’d test the rice. If it is still hard I’d add some more and boil again etc until it’s the right consistency .

***If you’re making a double batch try 1.5L first or 1.75L then add as you go.

In a saucepan bring coconut extract to a boil and thicken it with the corn flour. Stir as you go until the right consistency.
Mix sugar, salt, sesame seeds and crushed peanuts together and garnish on top.
