Last night I tried logging on with my laptop and got in at first go. I was worried as my passwords are mostly random ones and then I’d forget which one is for what.
Today looks like a hot hot one. For me it will mean running around packing for our week away and making sure this place is in a reasonable state for us to come back to in the New Year. I am hoping to bring down my card making stuff so I can replenish my card stand. I haven’t made any for months.
I also have to go groceries shop as nothing will be open tomorrow. Where we are Asian shops will still be open if we are desperate but not at our hidey hole. We are hoping to leave tonight after dinner at my sister’s.
Hubby have made some nem that’s sitting in our freezer at the moment. Left overs from his footy gathering.
Nem is Viet cured meat. Usually cooked on a charcoal BBQ. I am responsible for the noodles, sauce, lettuce and herbs that goes with it. The dish is called bún nem nướng .
Nem is easy to make lots and lots of garlic into the processor with prawns and pork. Hubby uses 1 packet of curing powder with double the amount specified of meat and prawns i.e. 1 350g packet to 3 kg (1.5kg minced pork and 1.5kg of prawns) not 1.5kg as specified.
The powder is called Tusino curing powder. It comes in 350g packets. Hubby uses the Gold Diamond brand (Product of the Philippines) that I buy for him. Over here there’s another brand from Viet Nam but not as good according to the Asian groceries lady.
Then he pops it in the freezer. No need to add salt or anything like that as the packet that you buy contains it already.
If you are fancy like my dad he adds in little cubes of fat to it and only chop the prawns into pieces instead of processing them.
Tomorrow will be very hot so not even sure we are allowed open flames. It might be a total fire ban which means BBQing is out of the question.

Never heard of Nem, so will have to look for it *whenever* we ever have Vietnamese food again (sigh). When we lived in Portland there were tons of restaurants there, and now nothing. It’s like a wasteland here in our area of Florida (Treasure Coast) with lots of Italian places and a smattering of “New York Chinese-style) and that’s it. We’ll be moving up near Jacksonville, so I’m hoping for more variety.
Growing up, and certainly with my ex-wife, we’d always do a “Jewish Christmas” in going to a movie and then a Chinese restaurant on Christmas day. 🙂

We usually celebrate on Christmas eve being non Christians. My aunty married an Italian so growing up everyone would bring a plate and have it at her place. Pressies get opened on Christmas eve once Santa handed them out. The TV would have Christmas Carols on as that’s when they hold them here.
Now we just have our immediate family. Most time it’s just a BBQ and then the kids would open pressies. Last year we just had us. The year before it was at our hidey hole. This year at my sister’s though not sure how we are going to leave for our hidey hole later as got food that needs to be kept cold.

I’m charging my phone at the moment, then off to my parents so dad can plant sit my two orchids. Then catching a bus from their place to Westfield to sort out my phone that died.

She still has your fish cakes recipe. She said it looks easy; I will take picks whenever she makes it (it always takes my requests a long time, but she eventually gets around to doing it). Heal thy phone! lol

I’m lost without it. It’s funny how you get attach to it. And yet 22-23 years ago we made do without a phone. Still remember those dreadful ones that you got to use your finger to dial. I’d always forget which number I’m up to and have to start all over. I don’t leave home without my phone as I have to be on country roads to get to my hidey hole. Don’t feel safe just in case the car breaks down and I am stuck in the middle of nowhere. Plus only got my Melway (map book) so the phone doubles as the GPS.

I know… just this morning when I was at the gym, I was thinking about phone and debit cards, and how years ago we used pay phones when we were out, and we always carried cash. Crazy how spoiled we are now.

I still carry cash, best way to bargain down an item. Everyone likes cash. I’m old fashion. Bonus is cash is untraceable no paper trails.

It’s a town house. Would have loved a cottage but we decided that it has to be low maintenance and with a view so ended up with a modern place. It was the views that did it for me and within walking distances to the beach , river for fishing and shops. About 12 mins to shops and beach and 5 minutes to the river. It’s high up so we’ve got views to both the river and ocean. One of those that you just lock up and go. When it’s not holiday season I only have my next door neighbour there, the other 3 townhouses are also holiday houses.

Oh, that really sounds nice. I’ve always wanted such a place — you’re lucky. But I live near the ocean, which I never thought would happen, so I guess I should be grateful. Pics in a future post, please!

You don’t want to be driving anywhere this season down there. There’s no parking . Most locals tends to go somewhere else for this season. It’s crazy and expensive. The restaurants all jack up their prices because of the tourists.

Yeah… we’ll be moving to a tourist town next year, so I guess I better start getting used to that again.

It’s not easy to share but then I think I’m so lucky to have it most of the year to myself that I can share it with some poor city dwellers for a few weeks.

Sadly, no! lol. But I’m the one who told her not to (my birthday was on the 8th and night is the first night of Chanukah). I said “don’t spend money on me; let’s save for our new home!” Of course, I bought her a nice gift which made her feel guilty. lol
