Dad was sitting there waiting for his deliveries so I asked him what he did with his char siu. He said he steams them and then pan fry them. He reckons the oven dries them out too much .
Ummmm I am lazy so I’m popping them in the oven at 200C and for 20 minutes only.
Then I’m going to griddle them.
The roasting tray was just the right size for the locks.
